5 Fast, Easy Breakfasts From Your Freezer and Pantry

Breakfast seems to be the toughest meal of the day for so many people. You’re in a hurry, trying to get kids out the door for school, and too often you end up just throwing a box of expensive, sugary cereal on the table just to try to get out the door on time. 

Been there, done that. 

Or you end up skipping breakfast and then by 10:00 you’re hangry. Well, maybe you aren’t but I am! 

With a 6 month old who isn’t currently sleeping through the night, mornings are not my favorite time of the day at the moment, and if it’s not easy it’s not gonna happen.  

Here are my top five breakfast solutions to try to actually eat breakfast and beat the morning hangry!

I prefer to make pancakes fresh and they’re actually really fast and easy to make before school or work in the morning. 

However, if you’re short on time, it’s really great to have pancakes in the freezer or the fridge! The kids really like being able to just pull a few out. They warm them up and eat them with jam or butter on the way out the door.

Oatmeal doesn’t take any more time than cold cereal in the morning but it’s a million times less expensive and waaaay more filling! 

I use quick cooking oats, add water or milk, cinnamon and a little bit of maple syrup. Then microwave for 45 seconds and it’s ready to eat. 

Oatmeal costs around $0.07 per serving so it’s super inexpensive too!

Another great option is overnight oats. They’re even quicker and since they’re ready to eat, it’s an easy grab and go

3. Breakfast Burritos

Breakfast burritos are an awesome freezer meal for quick, filling breakfasts when you’re in a hurry! 

Scramble some eggs with peppers, onions, whatever meat you choose (I’m a big fan of sausage breakfast burritos) and cheese. Roll into a tortilla shell and boom easy breakfast! 

These freeze really well so I like to make a HUGE batch. Seriously, I’ll scramble 2 dozen plus eggs to make some for the freezer. Then I have a quick easy breakfast on days when I’m in a hurry. 

They’re ready to eat after 1-2 minutes in the microwave.

4. Egg Muffins

Egg muffins are another great make ahead and reheat breakfast. All you do is beat some eggs, add veggies, meat, and cheese of your choice and bake in a greased muffin tin at 350° for around 25-30 minutes. 

These are pretty healthy too! My biggest problem with making these ahead of time is trying to keep the kids from inhaling them all before I get them in the freezer! 

My favorite combination is spinach and tomato with mozzarella cheese, but you can use any combination of veggies, meat and cheese that you’d like. These are really good hot or cold, so you can grab them on your way out the door without having to stop and heat them up!

5. Breakfast Sandwiches

Breakfast sandwiches have a huge variety of options! These reheat super well from the freezer and they can be really inexpensive. 

The best and easiest way of making these is by baking the scrambled eggs, cheese, veggies and meat on a cookie sheet, then cutting it into squares and freezing it. Then you simply warm up the egg squares and put them between two pieces of toast. 

As a bonus, this is so much less messy when you eat them because all of the filling is baked together! If you have time to sit down and eat, you can also use these squares as omelets instead.

I’m probably never going to be a morning person, but at least with these fast easy breakfast ideas I’m not hangry too!
