Zucchini and I have a love-hate relationship.
I love eating them! Fresh sautéed zucchini is one of the meals I look forward to every summer. I love that zucchini is almost impossible to kill and it reliably produces every year. Two zucchini plants produce more than enough zucchini for my entire family, so it barely takes up any space in the garden.
On the other hand, I always plant double or triple the number of plants that we actually need every year. By the beginning of August without fail I end up buried in zucchini! It takes over the whole kitchen, we start eating it at every meal, and eventually nobody ever wants to see another zucchini again, much less eat anymore. Not to mention, it is impossible to give it away because everybody I know has more zucchini than they need too! I usually manage to give some to a few friends without gardens, but eventually even they start running the other direction when they see me coming with zucchini in hand. Honestly, it’s a bit ridiculous.
Fortunately, I have collected some amazing recipes for zucchini that help my family get excited about eating zucchini for the fourth or fifth time in a week. Here’s some of my favorite zucchini recipes, enjoy!
